Not all things which are sweet in life are full of sugar. Sometimes, savory can be just as sweet. Case in point, when you are making a huge Tomahawk steak for Valentine’s Day and you use a delicious chocolate- coffee rub to make the meat POP!
To make the rub:
- 3 tbsp finely ground coffee
- 1 tbsp unsweetened cocoa
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chipotle pepper or ancho chili pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
When you prepare the steak, take it out of the fridge about an hour to two hours before you want to cook it. Make sure to it is dry as it comes to temperature. Then right before cooking, smear olive oil all over and then sprinkle completely with the rub. Then cook the steak off. Depending on your steak thickness, cook two-thirds as long on the first side as the second, and then stick the whole thing in the over until your meat thermometer reaches your preferred doneness.
Crack open a good bottle of red and then feed each other slices of chocolate covered steak.
Sometimes, the sweetest things in life don’t have a drop of sugar in them. But rather they are so sweet because of the complementing flavor of something else. Coffee brings out the richness in chocolate. While chocolate tempers the bitterness of coffee. And both of those together bring out the sweetness inherent in good red meat. Combine that with a matching red wine and your one and only… viola, instant sweetness.
